Lately I’ve been having an insatiable desire for sweet-somethings, cakes in particular. However I haven’t had the time to hit the nearest confectionery so I figured I might as well whip something up myself. I dug out my old f&n (read: food and nutrition, not the fizzy drink co.) textbook and flipped to the recipe section which provided a simple guide to making plain butter cakes with the use of the rubbing-in method. This is one of my favourite techniques cos it allows me to get ‘down and dirty’ with the butter and flour, albeit a little tedious but fun!
Unfortunately I underestimated the recipe and left the cupcakes in the oven for 20 minutes as the recipe required, without checking on them, thinking what damage can possibly be done in such a short time!
